Boston Red Sox – The best of the best

Boston is having another very good year. Even though they fell to second place when they lost to the Tampa Bay Devil Rays 3-1 victory and sent Boston to its sixth loss in seven games. When New York beat Texas later Monday night, the Yankees moved into first and the Red Sox fell into a second-place tie with Baltimore, one-half game back.

In my opinion the Boston Red sox will recover and will win the World Series. This is just my opinion and I know the New Your fans will mumble under their breath when they read this article.

BMI, the NFL and You

At the end August 2005, Thomas Herrion, a lineman for the San Francisco 49ers died after a preseason NFL football game. He was 23 years old and 330 pounds. His Body Mass Index (normally below 30 or so for athletes) was 41. He was morbidly obese. The doctors say that arrhythmia (irregular heart beat) was the probable cause of his death.

I’m a football fan, so I watch the game all the time. For those of you who don’t and only watch the Superbowl at a friend’s party, it is not difficult to confirm that most NFL linemen are just plain fat.

What’s scary is that if someone came to me for training and I measured their BMI and it was anywhere close to Herrion’s, I would prescribe no more than 20-30 minutes of walking a day to start. Even if he was an NFL player. I would not even suggest he play in a pickup game of flag football. Regardless of how “fit” someone may be underneath their fat they are still carrying extra weight, fatty acids and probably excess glucose.

There’s another sport where you’ll find similar levels of obesity and here is the prognosis for those athletes as well from and article by Dr. Eric S. Freedland,

“Japanese sumo wrestlers are a good example of how exercise can only do so much for so long to offset the harmful effects of obesity. Competitive sumos carry most of their abdominal fat subcutaneously with relatively little visceral fat (which is more strongly associated with insulin resistance). They are able to maintain insulin sensitivity until after they retire when they develop large amounts of abdominal visceral fat, insulin resistance, type 2 diabetes, cardiovascular disease and premature death.”

Now let’s step away from athletes for a moment. I’ve only used them to make a point.

Do you know how much extra weight you are carrying? You could be in worse condition than some of these athletes because you do less activity than they do. If your BMI is around 30-35 and you don’t do any physical activity, your health is being compromised tremendously. You practically have the same prognosis as the Sumo Wrestlers without the “after retirement.” All those diseases and instances have started already and it is up to you to start working out to reverse them.

This might be the most incredible thing about exercise… you can reverse the decline of your health!

How can you calculate BMI? For someone who is not mathematically inclined, you can do this at our site! I’ve just added a page with a calculator and I think you should consider finding out just what your BMI is, because it can give you an idea of what you may need to do to help keep cardiovascular disease and other nasty aliments at bay.

If you find your BMI is over 30, do yourself a favor and consider going for a walk tonight. Just 20 minutes or so. Don’t get too crazy. When you’re walking think about how good it feels to be outside. Think about how the breeze brushes against your face and how the sounds of nature call to you.

When you get back, sit down and take a moment to scan your body and see how good it feels to get your heart moving and your body jump started.

After you do this for a few nights, I know you’ll begin to enjoy it. Make it a habit and the quality of your life will dramatically increase. You’ll have more energy, be more productive and be able to spend more time doing the things you want to do because you’ll have a clearer mind!

Trout Species – Rainbow Trout and Brown Trout

Rainbow Trout: Few freshwater fish can match the fighting spirit and beauty of a Rainbow Trout.

The Rainbow Trout is a well-traveled species of fish. Originally, the Rainbow Trout was found in the coastal rivers in the United States on the west coast but today, Rainbow Trout are found throughout the United States, as well as in the cold-water streams of South America, Europe, New Zealand and even Australia.

The reason for the wide range of Rainbow Trout in the U.S. is that Rainbow Trout are relatively easy to transplant. Virtually all areas that Rainbow Trout now inhabit are due to environmental transplants – both intentionally or unintentionally.

Regardless, Rainbow Trout are the most popular types of trout found in the world today, and are also the most sought after trout by fly fishermen.

The Rainbow Trout is equally famous for it’s acrobatic aerial displays and very long runs to avoid being caught.

Rainbow Trout are also well-known for being highly selective in what they eat. While at other times, they seemingly gorge themselves on just about everything in sight.

Rainbow Trout are easily distinguished by the red stripe that travels the length of the fish, from the gill plates to the tail. Rainbow Trout also have hundreds of black spots that cover the dorsal of the body (the dorsal part of the body of a trout refers to the “back side” of the fish).

The Brown Trout was originally a European and Asian fish, but has made its way to North America, New Zealand and South America. In the United States, Brown Trout are found extensively in the Rocky Mountains and also in Midwestern and Eastern U.S. trout streams.

The Brown Trout is famous for its intelligence and cunning ability to avoid being caught. Simple fly fishing tactics that work for other types of trout often times fail miserably when fly fishing for Brown Trout and often lead anglers to frustration – especially beginning anglers. Yet this same intelligence makes catching Brown Trout all the more challenging and rewarding, especially since Brown Trout are generally a little bit larger than their Rainbow Trout cousins. This is due primarily to their ability to live in warmer water (which usually has higher nutrients than colder water).

Brown Trout are sometimes hatchery raised, although not nearly on the same scale as the Rainbow Trout. The difficulties in raising Brown Trout in hatcheries, combined with the desire of anglers to fly fish for the easier to catch Rainbow Trout, have limited the numbers of Brown Trout raised in hatcheries.

Brown Trout are notorious for ruining many fly fishing trips for anglers. The high degree of intelligence displayed by Brown Trout makes them very difficult to even hook. Once hooked, the real intelligence of the Brown Trout really becomes evident. Instead of putting on acrobatic displays like the Rainbow Trout, Brown Trout almost always head for every obstacle in the river – in hopes of entangling and snapping the line. Failing that, it will make monstrous runs, and even take to the air like the Rainbow Trout as a last resort. In short, a Brown Trout will truly exhaust itself trying to break free from your fishing line, using every trick they know to escape. All to often, the trout ends up getting away since light tippets and tackle are often usually used when fly fishing for Brown Trout – leading to many ‘the big one that got away’ stories at dinnertime.

The Brown Trout is recognized by its butter colored sides and has black and red spots following the lateral line of its body. To many people, the Brown Trout is rather ugly, especially when stacked up against a more colorful rainbow or Brook Trout. However, the minute you hook a 20-inch Brown Trout – you’ll think it ’s the most beautiful fish in the world.

If you’re an avid Rainbow Trout angler, be warned that the Brown Trout could very well be the primary trout species of the future, so it’s best to brush up on your tactics for this wily fish. Brown Trout are remarkably resilient and have a strong instinct to survive. Their ability to live in warmer waters than other trout, along with their resistance to Whirling Disease, allows Brown Trout to thrive in areas where Rainbow Trout often struggle to survive. In the years to come, especially if drought conditions continue in the Rocky Mountains and the climate continues to warm, it is quite possible that Brown Trout will become the primary trout species in most of the United States.

Year of the Saints

Well Saints fans the beginning of football season is almost upon us. With the start of training camp, it’s time to take a look at the upcoming season. Saints fans have become familiar with the high expectations early and the depressing let downs late into the season. There have been too many seasons, for the comfort of Saints fans, that have ended with the Saints looking from the outside in on the playoffs. Every year we flutter to find an excuse for our all too early elimination from contention. This is something Saints fans have dealt with since the inaugural season back in 1967.

Every year we ask ourselves the same questions, “When will it be our turn to bask in the glory of a title?” or “What would have happened if a few plays or injuries had went another way?” and sigh to ourselves “Next year will be our year!”. With all the short comings of this organization you begin to wonder if it will ever happen. Do the Saints really have a chance at a title? The answer to that question would be “YES!”. I mean why not, every team has a chance right? If you don’t think so look back at the Carolina Panthers not even a year ago. Sure they didn’t win it all but can you say they didn’t have a chance. Well I bet you would have a said they didn’t a year ago. Did anyone think the New England Patriots would win it all in 2001-02 against the mighty Rams? Mighty Rams? Did you think you’d hear that before the ‘99 season? The truth be told, everyone in the NFL has opportunity to make a run. It’s up to the players, coaches, and yes fans! So is this finally the year of the Saints? Are there reasons for faith, well lets take a look.

Led by 4th year starter Aaron Brooks the Saints’ offense has shown flashes of greatness. Brooks has shown poise at a position that needs it most. Aside from a case of the fumbles last year, Brooks showed improvement in his ability to run the offense, as he posted a career best 88.8 quarterback rating and threw for 24 touchdowns to only 8 interceptions despite a injury plagued year that limited both Joe Horn and Donte’ Stallworth. With all the negatives put on Brooks you have to take a long look back to a certain Mr. Manning to find a better Saints quarterback. Aaron has posted some of the best passing numbers in Saints history since becoming the starter and ranks in the team’s top five in every major passing category, including: Net yards passing (8,918, fourth), pass attempts (1,280, fourth) completions (708, fourth), completion percentage (55.3, fifth), touchdowns (62, third) and passer rating (79.4, second). He has thrown for over 300 yards five times since emerging as the team leader in 2000 in relief of injured starter Jeff Blake in Week 11 (vs. Oakland, 11/19/00).

Striving to not have a repeat of year’s past wideout Donte’ Stallworth has worked on his conditioning in the offseason to prevent the nagging injuries, along with improving his work ethic to develop himself into a real force for 2004 and if he CAN stay healthy look for great things from this speedy receiver. Horn, despite rumors of a possible trade, returns as one of NFL’s most prolific receivers since signing with New Orleans in 2000 adding to one of the league’s best receiving cores. Another bright spot for the New Orleans offense was the emergence of tight-end Boo Williams who in replacement of the injured Ernie Conwell proved to be the tight-end Haslett and company has been looking for since their arrival in New Orleans. To add to this already thrilling group unit, “Deuce is loose” and has been since getting the starting nod in 2002. McAllister has emerged as on one of the leagues, arguably, top 5 runningbacks. One thing however there is no argument about is that Deuce is one of the league’s most dangerous threats and is one of the major keys to New Orleans success in 2004. He gives the Saints a valuable asset whether it be through running the ball, receiving, or blocking. All areas McAllister has mastered over his still young career. Deuce has eclipsed the 1000 yard mark in each of his two seasons as the Saints starter, having his best in 2003 with 1,641 yards rushing, reaching the 100+ mark in 9 consecutive games and his second consecutive Pro Bowl nomination.

The Saints’ defense is one of the teams biggest question marks coming into the training camp. After a failure with the “lunch bunch theory” coach Haslett look to speed and a nonstop motor on defensive line with the free agent pick up of DT Brian Young and the drafting of Ohio State defensive end Will Smith with the 18th overall pick in April’s draft. With the offseason addition of defensive line coach John Pease the Saints’ defensive line look to be improved. The main area’s of concern going into the offseason, however were at the linebacker and cornerback spots. Haslett and crew hope that the drafting of MLB Courtney Watson and the development of second year linebacker Cie Grant fill the needs at linebacker. The Saints also went out and picked up CB Jason Craft and New Orleans Voodoo standout Monty Montgomery give them the depth needed to be successful at stopping the pass. There have also been reports the 5th year man Fahkir Brown has improved dramatically and could vie for a starting spot during training camp. There are still too many question marks on defense that should be answered during training camp and preseason.

After all has been said the question still remains. Is this the Saints year? Well only time can tell but with the surplus of young talented players you definitely can’t rule them out. Regardless of the overall outcome of this season, it should be a fun exciting ride. So get your jersey’s out of the closet, pull out the Mardi Gra beads, and start the chants of “WHO DAT!” because it’s football time in the Big Easy!

A Natural Bodybuilding Dó (way of life).

In the discipline of tae kwon do, the Korean martial art known for it’s powerful kicks, tae means to trample or foot, kwon means fist, and do means way. In its simplest form it is the way of the hand and foot. Natural Bodybuilding is similar to this martial art in its regards to discipline, perseverance, and inner strength. These are the three of the tenets of tae kwon do to achieve success. Miss one of the three characteristics and chances are you will not achieve a successful natural bodybuilding lifestyle. Worst yet, you will not receive the benefits that this “way of life” can bring.

Learning a new way to eat is one of the prerequisites needed for success. You will develop a nutritional habit to provide fuel for demanding workouts and bodybuilding, also protein to rebuild muscle fiber. You will learn of ways to increase your nutritional energy. An example would be to introduce flaxseed to your diet by adding it to salads, vegetables and your morning oatmeal. Flaxseed is naturally high in Omega-3 oil, which is an excellent long enduring energy source. Discipline will be needed to reinforce this prerequisite. To avoid junk food that is high in fat and refined sugar can be very challenging, especially with it being so prevalent in today’s modern society.

To “bring out” the muscularity that you will have developed, you will need to do cardiovascular training. The bodybuilding jargon for this transformation is “cutting up” or “ripping”. This type of training not only helps burn off the muscle blurring fat but also increase energy by developing the lungs to process faster. It will also help you recover faster from a muscle building workout by forcing additional blood to move throughout your body by way of the circulatory system. This fresh blood will carry out the residuals in your muscles that remain from training. Perseverance is needed to pursue cardiovascular training for most individuals. Getting out of a warm bed in the early morning to go running can be quite tough even for the most dedicated.

The one item that hasn’t been covered as of yet is muscle building or bodybuilding. It is a game of mind over matter. Inner Strength will become a major player in this part of the equation. To endure the lactic acid build-up that occurs when going deep into the “pump” can be quite overbearing and yet at the same time exhilarating. Because there are so many different muscle-building theories out there it can be quite overwhelming trying to decide what to believe. This decision can be difficult even for a veteran bodybuilder. A lifter must develop a skeptical outlook at different programs and judge if the training programs are worthwhile.

The Three Tenets and The Three Catalysts Relationship.
The three tenets; discipline, perseverance, and inner strength are associated with the three catalysts for bodybuilding development. The three catalysts I used for optimum muscle development are listed below.
Nutrition needs (discipline)
Fat-burning cardiovascular training (perseverance)
And muscle transfiguration (inner strength)

Like a circle, all three intertwine with each other. Each one depends on the next one for success.

Boiling – The Test of a Good Cook

Let’s take a look at one of the most basic forms of cooking – immersing food in hot water.

Yes, I know. That includes simmering as well. But I want to look at boiling, some of the different foods involved and the ways in which they are treated.

Boiling is really divided into two separate methods. One is to place the food in cold water and gradually heat it to boiling point, the other is to bring the water to the boil first before adding the food.

The first method might be used for potatoes, for example, and the second for green vegetables.

A variation on both methods is whether or not the food should be covered while cooking. Let’s deal with that right now. Green vegetables should never be covered while boiling – they will lose their color and turn an unattractive shade of gray.

Vegetables such as potatoes should be partially covered to preserve vitamins and reduce evaporation.

Remember that water will come to the boil much quicker if the pan is covered to start with, as will any other liquid.

Let’s take an example

Eggs. This may seem too simple, but the truth is you can tell more about a cook by the way they handle eggs and potatoes than just about anything else. I have lost count of the number of times a chef has tested my skills by asking me to boil potatoes or make a simple omelet.

So, how do we boil eggs?

One way is to bring a pan of water to the boil, put the eggs in and then time them for two, three or five minutes depending on the result you want. But there is a better method.

Put the eggs in cold, salted water and bring to the boil on fierce heat. The salt will not flavor the eggs. It’s there simply to make the water boil at a slightly higher temperature.

Turn off the heat and prepare your toast. The eggs will be ready when you are and can either be turned out on to the toast or served in their shells. Simple, huh?

Very. But there is one thing you have to have to make it work – fresh eggs!

If you’re one of the countless millions who don’t live right next to a chicken farm, then you’re just going to have to check your use-by date. If it’s any less than four weeks away, don’t buy the eggs!

I mean it. Eggs, like vegetables and fruit, need to be as fresh as you can get them.

Green vegetables

Broadly speaking, we’re talking about things like green beans, brussel sprouts, snow peas and so on. Not cabbage, which should never be boiled, and not some of the more delicate greens like spinach and buk choy.

Beans and sprouts are best cooked in uncovered, rapidly boiling salted water until they are just cooked – which means they are still firm and cut cleanly.

Drain them in a colander and then plunge them immediately into icy water. You can leave them there until you need them. This is the ‘magic’ step chefs use to keep greens truly green.

Yes, I know they’ll go cold. That’s not a problem. You see, by using this method you can prepare your green vegetables well ahead of time and not have to worry about them until just before you serve the meal.

When everything else is ready, have a pan of boiling water on the stove. Drop the greens in, count to ten and drain them. They’re ready to serve as is, or you can glaze them with melted butter, add nutmeg, pepper or toss them in a little balsamic.

Easy? You betcha. And a foolproof way of ensuring that the greens are ready at the same time as the rest of the meal.

About potatoes and rice

Wait a minute! What’s this? You cook potatoes and rice the same way?

Yes! Well – almost. And it’s foolproof.

First potatoes. Which are the more difficult of the two to cook. You don’t think so? Wait and see.

Add your potatoes to cold salted water, bring to the boil and cook until a wooden skewer will pass easily through them without undue pressure. Drain into a colander.

Now put about an inch or so of water in the pan, balance the colander (with potatoes) on top of that, return to a low heat and cover. You can either use the saucepan lid or some silver foil. Personally I use a tea-towel (by far the best) but if you do that you need to make very sure that it goes nowhere near the heat
- especially if you’re cooking with gas!

Now the point is this. The potatoes will keep beautifully in the gently steaming atmosphere while you get on with everything else. They will even improve in texture and be ready to serve whenever you need them.

Okay. What about the rice?

Easy. Bring plenty of salted water to the boil. Then add the rice – roughly one cup for every two people – stir once, bring back to the boil and cook for exactly 15 minutes.

You will have to reduce the heat slightly to prevent the mixture boiling over and you also need to partially cover the pot to reduce evaporation.

Now drain and follow exactly the same procedure as you did for the potatoes.

No panic, no undercooked grains, no expensive electric cooker. Just perfectly separated fluffy rice which is ready to be used when you need it.

Can you see what a powerful system this is? It means you can prepare your rice before you even begin to worry about your stir-fry or whatever else it is that you’re going to prepare.

Incidentally, don’t be afraid to add a little color to your rice by dropping some chopped up red or yellow bell pepper into the water about five minutes before you finish cooking it.

Or serve yellow rice by adding saffron or turmeric to the cooking water. Once you know this technique, the results are limited only by your imagination.

Pasta

Cooking pasta couldn’t be simpler. You boil it in salted water for however long it says on the packet. Then you drain it and it all sticks together in one inedible lump!

Well not any more. Here’s the solution (and it’s not adding oil during cooking)

Just before cooking ends, remove about half a cup of the cooking liquid and reserve it. Drain the pasta in a colander, return it to the pan in which it was cooked and add back in the reserved cooking liquid.

Stir it, and add about a tablespoon of olive oil. That’s it. Done. The oil and liquid will combine to give your pasta a smooth, creamy finish.

No more stuck together lumps. No more dried out bits. And you can add any sauce you like.

If you’re serving it plain and it seems a little sloppy, adding some grated parmesan or pecorino cheese will quickly solve that problem for you, as well as injecting some welcome flavor.

Boiled Beef

The expression ‘boiled beef’ probably arises from the fact that it’s easier to say than ’simmered beef’ – which is what it really is.

Salted, pickled and corned beef (or pork) amount to the same thing and are cooked by immersing in a bouillon (posh name for stock) which is kept just below boiling point. Cooking time varies with the size of the piece but it’s going to take at least an hour and more likely two or more.

The great thing is that it’s pretty hard to overcook it, so making it the center of your main dish saves hugely on stress. It’s also delicious. You can serve it to anyone with confidence.

Nobody that I know pickles their own meat these days. Buy it from your butcher or supermarket, allowing around six ounces of meat per person.

Trim the fat off. Unlike roasting you don’t need any fat to keep the meat moist. Put it in a pot only slightly larger than the joint, cover with water (no salt) and bring to the boil.

Then drain the meat and discard the water. Add fresh, some salt, a peeled onion into which you’ve stuck a couple of cloves, three or four carrots and a tablespoon of vinegar.

Bring this mix to the boil and then reduce the heat to a simmer. Give it about 20 minutes to the pound and serve it with your favorite mash and greens.

Oh yes, and don’t forget to reduce the liquor you cooked it in to make a moistener for the meat.

Easy caramel

If you boil condensed milk, in its tin, for around 45-50 minutes, it will turn to caramel which you can then use as a base for desserts. Just stick the tin in boiling water and wait. Of course you may have to add extra water from time to time to prevent drying out.

To easily get the caramel out after allowing it to cool down, open the tin at both ends and push it through with a wooden spoon or similar kitchen item.

Here’s a simple method of using it:

Crush some cookies into crumbs, either by putting them between sheets of cling-film and beating the living daylights out of them with a rolling pin, or in a food processor.

Mix the crumbs with melted butter and press this mix into the base of a spring-form cake tin.

then chill it in the fridge for around an hour.

Spread your caramel on top of the cookie base (warming it slightly will make this easier); pile sliced fruit on top of that (banana is perfect); then pile on whipped cream to which you have added some vanilla essence and a little fine sugar. Grate a little dark chocolate onto the finished tart.

Chill, remove the spring form case and serve from the base. Now is that easy or what? And you can make it the day before if you want.

Do you need a recipe for that? Of course you don’t. The way your version turns out is just the way it should be – and it will taste every bit as good as mine, if not better.

Parboiling

I’ve included this as a cooking method because it’s a useful way for the savvy cook to remove excess fat from various meats in order to get a crisp finish when barbecuing or grilling.

The sort of things I’m talking about are spare ribs, chicken wings, and even duck prior to roasting.

All you do is plunge whatever you’re cooking into boiling water (no salt needed) and leave it there to partially cook. You’ll see the fat floating to the surface as scum, which needs to be skimmed off.

If you are going to parboil you need to do it in good time, because you want the surface of the meat to dry out before you go on to the next step, which will be a marinade (to put back lost flavor) followed by your barbecue, the broiler or an oven.

The amount of time the meat needs to spend in the water depends on the thickness of the fat, but think in terms of around 15 minutes for most things.

Will nutrients be lost?

Yes, there’s no escaping that, but the trade-off is that you will have seriously reduced the fat content as well, which will in turn have reduced your cholesterol intake.

For most people, the second part far outweighs the first and of course the protein content will be more digestible – so you even get an added bonus.

Makes 4 Servings

Ingredients

  • 1/2 Cup Mushrooms, sliced
  • 1/2 cup each Onion, Celery, chopped
  • 1 Can diced tomatoes
  • 1/2 Cup tomato puree
  • 1 tsp. each Oregano, Basil
  • 2 cloves Garlic, minced
  • 1/8 tsp. Pepper
  • 1 lb. Chicken breast, boneless, skinned
  • 4 Cups Cooked spinach noodles

Cooking Instructions

Combine mushrooms, onion, celery and Cup water in 10″ skillet; cover and
cook until tender. Stir in tomato, tomato puree, and seasonings. Cover and
simmer 30 minutes; uncover and simmer an additional 15 minutes. Serve over
noodles.
